Ingredients
- 1 medium sweet potato
- 1 small cauliflower
- 1/4 of a Kent pumpkin
- Salt and pepper to taste
- A drizzle of olive oil
- 1 litre hot stock (chicken or vegetable)
- 150g sour cream or cream
Instructions
- Start by chopping your sweet potato, cauliflower, and pumpkin into large dice. Toss them into your Air Fryer basket.
- Season with salt and pepper, and give them a good drizzle of olive oil. Shake the basket to make sure all the veggies are coated.
