Basque Chocolate Cheesecake
Method
- Place a microwave safe container filled with chocolate in the microwave for a minute until melted.
- Place cream cheese and 5 eggs into the food processor and whizz until smooth.
- Add coffee, sugar, cacao powder and plain flour and whizz again until smooth.
- Mix together with a spoon before adding the melted chocolate in and stir.
- Line a springform pan with baking paper, pouring into the tin.
- Preheat your oven to 200°C and bake for 45-60 minutes.
- Turn the oven off and let it cool inside for 15 minutes, then move it to your bench to cool for an hour.
- Pop it in the fridge overnight to set.
- When you’re ready to serve, unspring the pan and slice the cake.
- Serve with fresh fruit on the side and enjoy.
