Basque Chocolate Cheesecake

This is the sort of dessert that looks seriously impressive without sending you into a spin in the kitchen. It’s rich, chocolatey, creamy, and has that gorgeous rustic look Basque cheesecakes are known for.

ALDI’s Choceur range makes this kind of treat feel a bit more doable too. Good quality, delicious, and budget-friendly is always a nice combo.

This cheesecake is rich and fudgy but still really simple to make. The food processor does most of the work.

Make sure the chocolate is fully melted before stirring it through. Let the cheesecake cool properly before chilling overnight.

Serve it sliced with fresh fruit on the side, just like the recipe suggests.

This rich chocolate cheesecake is made with cream cheese, dark chocolate, cocoa and a touch of coffee for a deep chocolate flavour. It’s easy to prep, baked until set, then chilled overnight for a simple make-ahead dessert that feels a bit special.

Ingredients
 

  • 750 g cream cheese block
  • 1 cup caster sugar
  • 300 ml thickened cream
  • 1/4 cup plain flour
  • 1/4 cup baking cocoa powder
  • 1 tsp instant coffee
  • 5 eggs
  • 200 g dark chocolate block

Method
 

  1. Place a microwave safe container filled with chocolate in the microwave for a minute until melted.
  2. Place cream cheese and 5 eggs into the food processor and whizz until smooth.
  3. Add coffee, sugar, cacao powder and plain flour and whizz again until smooth.
  4. Mix together with a spoon before adding the melted chocolate in and stir.
  5. Line a springform pan with baking paper, pouring into the tin.
  6. Preheat your oven to 200°C and bake for 45-60 minutes.
  7. Turn the oven off and let it cool inside for 15 minutes, then move it to your bench to cool for an hour.
  8. Pop it in the fridge overnight to set.
  9. When you’re ready to serve, unspring the pan and slice the cake.
  10. Serve with fresh fruit on the side and enjoy.
