Hey there, fellow food lovers! 🍲 Day 9 of our one pan meals and this is the best so far according to my family! Ever been in the mood for a comforting pot pie with a spicy twist? Let me introduce you to my One Pan Curry Beef and Vegetable Pot Pie. Trust me, it’s the perfect fusion of comfort and flavor in a single dish! 🍛🥧


Ingredients

  • 🥕 1kg diced vegetables of your choice
  • 🥩 1kg minced beef
  • 🥄 2 tbsp curry powder
  • 🍲 1 tbsp beef stock powder
  • 🍚 1 tbsp flour
  • 🍅 2 tbsp tomato paste
  • 🌶️ 1 tsp chilli flakes (only if you’re feeling spicy!)
  • 💧 1 cup water
  • 🧂 Salt & pepper to taste
  • 2 squares of puff pastry

Instructions

  1. Heat up that pan & toss in the veggies. Sizzle ’em up until they’re soft, which should be about 10 minutes.
  2. Slide in the beef and give it a good mix until it’s browned and mingling with the veggies.
  3. Time to spice things up! Add curry powder, stock powder, flour, tomato paste, and if you’re daring, those chilli flakes. Stir until everything’s dancing together and coated nicely.
  4. Pour in the water, and give it a good stir until you’ve got yourself a thick and luscious gravy.
  5. Let’s get to the pie finale! Lay those pastry sheets right on top, tuck in those edges, and spritz with some olive oil. Now, into the oven it goes for 20 to 30 minutes at 200C. You’re aiming for that stunning golden brown!
