Berry Good Pudding

This is the kind of dessert that feels cosy and comforting without being a big job. You’ve got a fruity base, a soft topping, and that lovely baked pudding vibe that always goes down well.

Orchard & Vine mixed berries can be grabbed straight from the freezer, which makes a dessert like this very easy to throw together.

Why you’ll love it

The fruit underneath turns lovely and jammy, and the soft topping makes it feel like a proper old-school pudding.

Handy tips

Stir the fruit base well so the sugar and cornflour are evenly mixed through. Don’t press the batter down too much.

Ingredients

  • 4 apples
  • 500 g mixed berries
  • 1/4 cup caster sugar
  • 2 tbsp cornflour
  • 1 1/4 cups self-raising flour
  • 1 tbsp caster sugar
  • 120 g unsalted butter
  • 3/4 cup full cream milk
  • 1/2 lemon

Method

  2. Use your fingers to rub the butter into the flour and sugar until the mixture looks like breadcrumbs.
  3. Squeeze the juice of half a lemon into your milk, give it a little stir, and then pour it into the flour mixture.
  4. Mix it all together until you’ve got a smooth batter.
  5. Get that fruity base ready.
  6. Pop your diced apples, frozen mixed berries, corn flour, and 1/4 cup caster sugar into your air fryer.
  7. Give it a good stir so everything’s nicely mixed together.
  8. Now, spread that batter evenly over the top of your apple and berry mixture in the air fryer.
  9. Cook on 150 degrees for 30-40 minutes or until the top is cooked through.
