Looking for a quick, easy, and absolutely delicious  idea? This bacon breakfast bake is packed with hearty ingredients and comes together in no time. It’s perfect for using up leftovers, feeds the whole family, and is loaded with flavour.

Ingredients
 

  • 500 g bacon diced
  • 1 onion diced
  • 1 capsicum diced
  • 12 large eggs
  • 1 cup milk
  • 2 cups diced cooked potatoes
  • 2 green onions chopped
  • 2 cups grated cheese
  • Salt and pepper

Method
 

  1. Preheat your oven to 180°C and line a baking dish.
  2. In a hot pan, sauté the bacon, onion, and capsicum until golden and caramelised.
  3. Transfer the bacon mix into your prepared baking dish.
  4. Add the potatoes and green onions evenly over the top.
  5. In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the bacon and potato mix.
  6. Bake for 30 minutes. Sprinkle grated cheese over the top and return to the oven for another 10 minutes or until golden brown.
  7. Let it cool slightly, slice it up, and dig in!
