This easy moussaka-style bake layers lamb mince with potato and eggplant, then tops it with a creamy cheesy bechamel sauce. It’s hearty, comforting, and a great family dinner when you want something a bit special without too much fuss.

Ingredients
 

  • 50 g salted butter
  • 1/4 cup plain flour
  • 3 cups full cream milk
  • 500 g lamb mince
  • 1 red onion
  • 1 eggplant
  • 4 potatoes
  • 2 tbsp tomato paste
  • 1 tsp all purpose seasoning
  • 1 tsp ground cinnamon
  • 1 tsp allspice
  • 1 tbsp oregano leaves
  • 1/2 cup shiraz
  • 400 g crushed tomatoes
  • 50 g salted butter
  • 1/4 cup plain flour
  • 3 cups full cream milk
  • 1 tsp allspice
  • 1/4 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Method
 

  1. Place a liner into the air fryer, adding diced potatoes and diced eggplant.
  2. Drizzle olive oil and salt and pepper over, and cook at 200°C for 20 minutes, shaking halfway.
  3. To make your white sauce, melt butter in a saucepan, then add flour and stir.
  4. Gradually whisk in milk until smooth, then add allspice, parmesan, and mozzarella.
  5. Stir until thick and just boiling.
  6. Add all-purpose seasoning spice and cinnamon and mix, adding salt and pepper to taste waiting for it to thicken up.
  7. Turn off the pot and add in parmesan and mozzarella cheese and mix until melted.
  8. In a hot pan, brown your lamb mince with one diced red onion.
  9. Add tomato paste, allspice, cinnamon, and oregano, and stir for a minute.
  10. Pour in your red wine and crushed tomatoes, then simmer for 10 minutes on medium heat.
  11. Layer your potato and eggplant over the mince in the pan, pour the white sauce on top, adding some parmesan cheese and mozzarella on top and bake at 200°C for about 15 minutes or until golden brown and bubbling.
