Chicken and Cashew Nut

Hey foodie friends! 🍴✨ Day 8 of our 15 minute dinners.  Ever wondered how to whip up a mouthwatering Chicken and Cashew dish that will WOW everyone at the dinner table? Here’s my go-to recipe for those quick and delicious weeknight dinners! 🍗🌶🥡


Ingredients

Units Scale
  1. 500g diced Chicken thigh/breast 🍗
  2. 1 Capsicum, thinly sliced 🌶
  3. 1 Onion, thinly sliced 🧅
  4. 1 cup Cashews 🥜
  5. 300g spinach 🍃
  6. 1/4 cup oyster sauce
  7. 1/4 cup soy sauce 🥢
  8. 1 tbsp crushed garlic 🧄
  9. 1 tbsp crushed ginger 🍠
  10. 1/2 cup water 💧
  11. 1 tbsp corn flour 🌽

Instructions

  1. Sizzle that chicken in a hot pan till it’s golden brown.
  2. Toss in the onion and capsicum. Give it a few minutes to get them all nice and soft.
  3. Time to get saucy! 🥫 In a bowl, combine oyster, soy, garlic, ginger, water and cornflour. Give it a whisk and pour over your chicken.
  4. Sprinkle in the cashews and spiny, and watch the magic happen.
  5. Stir until that sauce gets all thick and glossy. In no time, you’ll see everything come together beautifully.
  6. Pair it up with some fluffy rice or slithery egg noodles. 🍚🍜
