Chicken & Pesto Loaded Potatoes
Ingredients
Method
- Chop your potatoes into 2 cm cubes, drizzle with olive oil and a sprinkle of salt, then air fry at 200°C for 20 minutes, giving them a shake halfway through.
- Season your diced chicken with salt and pepper and place in the air fryer basket and cook for 5 mins on 180C.
- Add your bacon and tomatoes and cook for another 5 minutes.
- Toss in your pesto and stir to coat everything.
- Pop your crispy potatoes over the top.
- Sprinkle on the cheese, then pop back in your air fryer for 5 minutes until everything is golden and bubbly.
- Scoop it onto plates and watch the whole family dive in!
