This easy chicken gyros recipe uses tender shredded chicken flavoured with lemon, garlic and oregano, then served in flatbread with a simple yoghurt sauce. It’s fresh, family-friendly, and a really handy dinner for busy nights.

Ingredients
 

  • 1 kg chicken thigh
  • 2 tbsp crushed garlic
  • 2 tbsp oregano leaves
  • 2 lemons
  • 2 tbsp olive oil
  • 1 L chicken flavour liquid stock
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. Place chicken thighs in your ovenproof pot.
  2. Pour over the remaining ingredients and give a good stir to combine.
  3. Place the lid on your pot and cook in the oven for 2 hours at 160 degrees.
  4. Once it has finished cooking, I like to shred the chicken and place it back into the juices from the bottom of the pot.
  5. This will help keep the chicken super juicy.
  6. Serve on flat bread with sliced cucumber and tomato, with a simple yoghurt sauce of 1 cup Greek style thick and creamy natural yoghurt, 1 teaspoon of crushed garlic, juice of 1/2 lemon and a pinch of salt and pepper.
  7. Mix all together and allow to sit for 30 mins before serving if you can wait that long.
