- 1 can coconut cream
- 1 tbsp fish sauce(omit for vegan version)
- 1 tbsp brown sugar
- 1 small cauliflower
- 2 cans chickpeas
- 300g spinach leaves
Instructions
- Heat some olive oil in a pan, add the curry paste, and stir for 2 minutes. π₯
- Pour in the coconut cream, fish sauce, and sugar, mixing it all up. π₯₯
- Toss in cauliflower and chickpeas. Cover your pan and let it simmer until the cauliflower softens – about 5 mins. π₯¦
- Add spinach and let it wilt. π
