- 250g pork mince
- 250g green prawns
- 1 tbsp crushed ginger
- 1 tbsp crushed garlic
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 fresh chilli, sliced (optional for a spicy kick!)
- 2 sliced green onions
- A handful of bean sprouts
**Sauce:**
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
- 2 tbsp rice wine
- 1 tbsp sesame oil
- 2 tbsp corn flour
- 1 to 2 cups water (depending on your preference for thickness)
- A pinch of pepper
Instructions
- **Sauce Prep:** Mix all sauce ingredients in a bowl and whisk together. Microwave for 2 minutes, whisk again, and heat for another 2 minutes.
- **Cooking the Filling:** Heat a pan with sesame oil and brown the pork mince. Add prawns, garlic, ginger, chilli, and green onions. Cook for a few minutes, then add soy and oyster sauce.
- **Omelette Time:** Pour the mixture over whisked eggs. Add bean sprouts and cover with a lid. Lower the heat and cook until the egg is set, about 10 minutes.
