**Egg Foo Young Ingredients:**

  • 6 eggs
  • A splash of sesame oil
  • 250g pork mince
  • 250g green prawns
  • 1 tbsp crushed ginger
  • 1 tbsp crushed garlic
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 fresh chilli, sliced (optional for a spicy kick!)
  • 2 sliced green onions
  • A handful of bean sprouts

**Sauce:**

  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 2 tbsp rice wine
  • 1 tbsp sesame oil
  • 2 tbsp corn flour
  • 1 to 2 cups water (depending on your preference for thickness)
  • A pinch of pepper

Instructions

  1. **Sauce Prep:** Mix all sauce ingredients in a bowl and whisk together. Microwave for 2 minutes, whisk again, and heat for another 2 minutes.
  2. **Cooking the Filling:** Heat a pan with sesame oil and brown the pork mince. Add prawns, garlic, ginger, chilli, and green onions. Cook for a few minutes, then add soy and oyster sauce.
  3. **Omelette Time:** Pour the mixture over whisked eggs. Add bean sprouts and cover with a lid. Lower the heat and cook until the egg is set, about 10 minutes.
