This chorizo baked rice is an easy one-pan dinner with loads of smoky flavour and hardly any fuss. With chorizo, rice, cherry tomatoes and frozen veg, it’s hearty, budget-friendly and great for busy nights. A proper chuck-it-in dinner that still feels really satisfying.

Ingredients
 

  • 2 chorizo sausages
  • 1 onion
  • oil
  • 2 cups rice
  • 1 tbsp crushed garlic
  • 1 tbsp smoked paprika
  • 1 punnet cherry tomatoes
  • 2 cups frozen veg
  • 3 cups water

Method
 

  1. Pop a splash of oil into a hot pan.
  2. Add the chorizo and onion, then cook until the onion is soft and the chorizo is a little browned.
  3. Add the rice, garlic and smoked paprika, then give it all a good stir.
  4. Pour in the water.
  5. Add the cherry tomatoes and frozen veg.
  6. Bring it to the boil, then turn the heat down low and pop the lid on.
  7. Cook for 15 minutes.
  8. Take the lid off, turn off the heat, then fluff up the rice with a fork.
