Why You’ll Love This Gingerbread Christmas Log

Tips for the Perfect Gingerbread Christmas Log
Want your Christmas log to turn out beautifully every time? Here are my top tips:
1. Choose the Right Biscuits 🍪
Go for sweet ginger biscuits with a good snap, like Arnott’s Ginger Nuts. Their robust flavour and firm texture are perfect for soaking up the cream without going soggy too quickly.
2. Whip That Cream Right 🍶
The cream cheese-cream mixture is the star, so whip it until it’s smooth and holds its shape. Use chilled cream for the best consistency.
3. Decorate with Flair 🎨
The garnish takes this dessert from tasty to spectacular. Fresh strawberries, mint leaves, and a dusting of icing sugar bring that “wow” factor to your Christmas table. Add an extra sprinkle of crushed ginger biscuits for a rustic touch.Serving Suggestions
This Gingerbread Christmas Log is a versatile dessert:
Serve chilled for a refreshing treat on warm Christmas evenings.
Pair it with a glass of spiced mulled wine or a simple cup of tea for a cosy vibe.
For a decadent twist, drizzle a bit of caramel or dark chocolate sauce over the log before serving.
Storage Tips
If you’ve got leftovers (unlikely, but just in case), here’s how to store them:
- Refrigerator: Wrap the log tightly in cling film and store it in the fridge for up to 3 days. The flavours deepen over time, making it even more delicious.
- Freezer: While freezing isn’t ideal for cream-based desserts, you can freeze slices in an airtight container for up to a month. Thaw in the fridge before serving.

Ingredients
Instructions
- In your stand mixer, combine cream cheese, cream, cinnamon, ginger, vanilla, and icing sugar. Whip it all together until it’s thick and luscious.
- Scoop out 1/3 of the cream mix and set it aside for later.
- Fold the diced crystallised ginger and choc chips into the remaining 2/3 of the cream mixture.
- Spread a bit of the ginger-choc cream on the base of your serving tray—this keeps the log steady. Then, sandwich some cream between two ginger biscuits and stack them upright on the tray. Keep adding cream and biscuits until you’ve got a delicious log.
- Take the reserved cream mixture and spread it over the log until the biscuits are fully covered (think festive frosting vibes!). Wrap it in cling wrap and pop it in the fridge overnight—or up to three days if you’re prepping ahead.
- When it’s time to serve, decorate your log with strawberries, extra biscuits, mint leaves, and a sprinkle of icing sugar for that magical Christmas touch.

Use a sharp, serrated knife dipped in hot water for clean cuts. Wipe the blade between slices for a tidy presentation.
Yes! Swap the ginger biscuits for a gluten-free alternative. The cream and spices remain the same, so you won’t miss out on any flavour.
