Looking for a show-stopping Christmas dessert that’s super easy, very budget friendly and doesn’t require an oven? Say hello to my Gingerbread Christmas Log! It’s creamy, spiced, and packed with festive flavours like ginger, cinnamon, and chocolate. Perfect for holiday gatherings or just treating yourself (no judgment here!). Plus, you can make it up to three days ahead—because we all deserve less stress and more dessert this season.


Ingredients

Units Scale
  • 1 pkt sweet ginger biscuits
  • 2 pkts cream cheese
  • 600ml cream
  • 1/2 cup icing sugar
  • 1 tsp powdered ginger
  • 1 tsp powdered cinnamon
  • splash of vanilla
  • 1/2 cup dark chocolate chips
  • 1/2 cup finely diced crystallised ginger
  • strawberries, 2 ginger cookies, mint leaves and icing sugar to decorate

Instructions

  1. In your stand mixer, combine cream cheese, cream, cinnamon, ginger, vanilla, and icing sugar. Whip it all together until it’s thick and luscious.
  2. Scoop out 1/3 of the cream mix and set it aside for later.
  3. Fold the diced crystallised ginger and choc chips into the remaining 2/3 of the cream mixture.
  4. Spread a bit of the ginger-choc cream on the base of your serving tray—this keeps the log steady. Then, sandwich some cream between two ginger biscuits and stack them upright on the tray. Keep adding cream and biscuits until you’ve got a delicious log.
  5. Take the reserved cream mixture and spread it over the log until the biscuits are fully covered (think festive frosting vibes!). Wrap it in cling wrap and pop it in the fridge overnight—or up to three days if you’re prepping ahead.
  6. When it’s time to serve, decorate your log with strawberries, extra biscuits, mint leaves, and a sprinkle of icing sugar for that magical Christmas touch.
