Hey everyone! 🌟 Day 9 of my veggie journey and I’ve whipped up something super colourful and bursting with flavour—it’s my Cowboy Caviar Salad or Dip! 🥗 Perfect for any meal or snack time. Trust me, it’s a total crowd-pleaser and an absolute breeze to make. 😍
Ingredients

Dressing
- 1/4 cup olive oil
- Juice of 2 limes
- 1/4 cup maple syrup
- Pinch of salt
- Pinch pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
Salad
- 1 diced onion 🧅
- 2 diced jalapeño chilies (optional for that spicy kick! 🔥)
- 1 diced capsicum
- 2 diced Lebanese cucumbers 🥒
- 1 can of corn, drained 🌽
- 1 can of black beans, drained
- A bunch of fresh coriander, chopped
- 1.5 cups of cooked and cooled brown rice 🍚
Instructions
- Kick things off by whisking together all the dressing ingredients right in your salad bowl.
- Toss in all those vibrant veggies and rice and give everything a good mix. 🥗
- And just like that, you’re ready to dig in! Enjoy this fab creation on its own, as a filling for tacos and burritos, or dip into it with some cheesy Doritos for a fun snack! 🌮
