Ingredients

For the filling:
  • 500 g chicken mince
  • 1 carrot grated
  • 1 zucchini grated
  • 1 celery stick diced
  • 1 onion diced
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp curry powder
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 1 tbsp chicken stock powder
  • Puff pastry sheets
  • 1 tbsp Greek yoghurt or milk for brushing
  • Sesame seeds optional, for sprinkling

Method

  1. Combine all filling ingredients in a food processor for a quick whizz, or get hands-on in a big bowl and mix thoroughly.
  2. Cut your puff pastry sheets in half to make them more manageable.
  3.  Lay a line of filling down the centre of each pastry sheet.
  4. Roll the pastry over the filling so it’s nicely tucked in.
  5. Slice them into your preferred size.
  6. Brush the tops with Greek yoghurt or milk, then sprinkle with sesame seeds if you're feeling fancy!
  7. Cook these beauties in the air fryer at 180°C for 20 minutes or bake in the oven at 200°C for 30 minutes until golden and delicious.

Frequently Asked Questions

Can I use a different type of sausage?
Absolutely! While pork sausages are traditional, you can use beef, chicken, or even vegetarian sausages. Just make sure they’re thick and juicy for the best results. The cooking method remains the same, so feel free to experiment with your favourite sausage variety to suit your taste preferences or dietary needs.
Absolutely. Chia pudding works beautifully with almond, oat, coconut, or soy milk. For a richer texture, canned coconut milk or barista-style oat milk give great results. Just adjust sweetness depending on your milk of choice.
Definitely. This dish tastes even better the next day as the flavours continue to develop. Simply reheat it on the stove or in the microwave until piping hot. To store, place the curry sausages in an airtight container and refrigerate for up to three days. For longer storage, you can freeze it for up to three months. Just thaw in the fridge overnight before reheating.
