🍰 Hey there, baking enthusiasts! 🎉 Today, I’m super excited to share with you one of my all-time favorite treats – Lamingtons! Trust me, these delightful, coconutty squares are the perfect addition to your baking repertoire. Let’s get started! 🌟


Ingredients

Units Scale
  • 125g soft butter
  • 1 cup sugar
  • A splash of vanilla
  • 3 eggs
  • 1 3/4 cup self-raising flour
  • 1/2 cup milk
  • 2 cups desiccated coconut

**For the Chocolate Icing:**

  • 3 1/2 cups icing sugar
  • 1/4 cup cocoa powder
  • 1 tbsp butter
  • 1/2 cup boiling water

Instructions

  1. In a bowl, cream together butter, sugar, and vanilla with electric beaters for 1 minute.
  2. Add eggs and beat for another minute until fluffy.
  3. Stir in the flour and milk until combined.
  4. Pour the batter into a lined slice tray and bake at 180°C for 30 minutes.
  5. Let the cake cool completely in the fridge, ideally overnight.
  6. Once chilled, cut into your desired size pieces.

**For the Icing:**

  1. Whisk together icing sugar, cocoa, butter, and boiling water.

**Assembly:**

  1. Dip each cake piece in chocolate icing using a fork, letting excess drip off.
  2. Roll in desiccated coconut and set on a rack over a tray to catch drips.
