Hey there, food lovers! 🍋🍗 Day 3 of 10 days of quick easy tray bakes is here, and I’ve got a zesty treat for you! Whip up my Cheesy Lemon Pepper Chicken Tray Bake for a dinner that’s both delicious and easy. This zesty and cheesy delight will have your taste buds dancing!


Ingredients

  • 4 Chicken breasts
  • 1/2 cup (120g) olive oil
  • 3 lemons 🍋
  • 1 tbsp (14g) Pepper
  • 1 tbsp (17g) salt
  • 1/2 cup (50g) fine grated Parmesan cheese 🧀
  • 1 Capsicum 🌶️
  • 2 bunches Broccolini 🥦

Instructions

  1. Mix cheese, juice from 2 lemons, salt, and pepper in a bowl.
  2. Stir in 1/2 cup of olive oil.
  3. Make a checkerboard cut on your chicken and lather it with your cheesy peppery mix.
  4. Spread out broccolini and capsicum on a lined baking tray.
  5. Place half the lemon slices on the tray.
  6. Lay your chicken over these slices, and top each breast with another lemon slice.
  7. Drizzle with olive oil and bake at 200°C (390F) for 25-30 minutes, or until golden and juicy.
