Ingredients

  • 2 red onions, large dice
  • 2 red capsicum, large dice
  • 1 kg meatballs
  • 1 packet taco seasoning or DIY blend: 2 tbsp smoked paprika, 1 tbsp oregano, 1 tbsp cumin, 1 tsp garlic powder, 1 tsp onion powder
  • 1/4 cup olive oil

Optional toppings:

  • 1 block feta cheese, crumbled
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 200°C
  2. In a baking dish, toss in the diced onions, capsicum, and the star of the show – those juicy meatballs!
  3. Sprinkle the homemade taco seasoning or spice blend evenly over the goodies. Drizzle with that liquid gold aka olive oil.
