One-Tray Turmeric Chicken Drumsticks with Roasted Capsicum

This one is easy, hearty, and perfect for a busy night when you still want something that feels like a proper dinner.

Spread the chicken out over the veg so everything roasts nicely instead of steaming. If your drumsticks are large, give them the full cooking time.

Serve it with Lebanese bread to mop up the juices. The Greek yoghurt on the plate adds a nice cool contrast.

This easy tray bake brings together chicken drumsticks, roasted capsicum, red onion, and warm spices for a fuss-free family dinner. It’s simple to prep, full of flavour, and perfect for nights when you want less mess and less stress.

Ingredients
 

  • 8 chicken drumsticks
  • 2 tbsp ground turmeric
  • 1 1/2 tsp ground cumin
  • 1 tsp ground coriander seeds
  • 1 large red onion
  • 2 capsicums
  • salt
  • pepper
  • olive oil
  • fresh coriander
  • Lebanese bread

Method
 

  1. Chop a red onion into quarters and slice the capsicums lengthways discarding the core and seeds, placing into a pan.
  2. Place the chicken drumsticks into a bowl.
  3. Sprinkle olive oil, ground coriander seeds, turmeric and cumin onto the chicken.
  4. Season with salt and pepper.
  5. Place the chicken on top of your vegetables in the pan.
  6. Preheat the oven to 200°C.
  7. Bake for 45-50 minutes until the drumsticks are golden, cooked through.
  8. To serve, add some Greek yoghurt to a plate and place chicken on top.
  9. Top with fresh coriander.
  10. Chop Lebanese bread into triangle slices to mop up the juices and place on the plate, drizzling olive oil on top.
