One-Tray Turmeric Chicken Drumsticks with Roasted Capsicum
Method
- Chop a red onion into quarters and slice the capsicums lengthways discarding the core and seeds, placing into a pan.
- Place the chicken drumsticks into a bowl.
- Sprinkle olive oil, ground coriander seeds, turmeric and cumin onto the chicken.
- Season with salt and pepper.
- Place the chicken on top of your vegetables in the pan.
- Preheat the oven to 200°C.
- Bake for 45-50 minutes until the drumsticks are golden, cooked through.
- To serve, add some Greek yoghurt to a plate and place chicken on top.
- Top with fresh coriander.
- Chop Lebanese bread into triangle slices to mop up the juices and place on the plate, drizzling olive oil on top.
