This easy chicken breast method gives you tender, juicy chicken every time without any fuss. Cooked gently with lemon, herbs and salt, it’s simple, reliable and great to keep on hand for all sorts of meals. A handy one for meal prep or quick lunches and dinners.

Ingredients
 

  • 2 chicken breasts
  • 1/2 lemon
  • herbs
  • salt
  • cold water

Method
 

  1. Pop the chicken breasts into a saucepan.
  2. Add the salt, lemon and herbs.
  3. Pour in enough cold water to cover the chicken by about 5 cm.
  4. Place the pan on the cooktop over medium heat and bring it just to the point of boiling.
  5. As soon as it starts to bubble, put the lid on and turn the heat down to low.
  6. Let it simmer gently for 10 minutes, then turn the heat off completely.
  7. Leave it to rest with the lid on for another 10 minutes.
