Ingredients
 

  • olive oil
  • 3 red onions
  • salt
  • 2 big spoonfuls garlic paste
  • 4 potatoes
  • 1 punnet cherry tomatoes
  • 2 tsp turmeric
  • 2 tsp coriander powder
  • 2 tsp chilli powder
  • 500 g raw prawns
  • fresh coriander
  • water or stock

Method
 

  1. Heat a good glug of olive oil in a big pan over medium heat.
  2. Add the sliced onions and a pinch of salt and cook until soft and starting to caramelise.
  3. Stir through the garlic paste and cook for a minute until fragrant.
  4. Add the diced potatoes and mix well.
  5. Throw in the cherry tomatoes and give it a stir.
  6. Sprinkle in the turmeric, coriander powder and chilli powder and mix everything together so it is coated.
  7. Add a splash of water or stock, pop a lid on and let it cook until the potatoes are tender.
  8. Once the potatoes are soft, add the raw prawns and stir through.
  9. Cook for a few minutes until the prawns turn pink and are cooked through.
  10. Finish with a big handful of fresh coriander.
  11. Give it a final stir and serve hot.
