This easy soup combines roasted carrots, red lentils, Moroccan seasoning, and vegetable stock for a hearty, comforting meal. Finished with lemon and a dollop of Greek yoghurt, it’s a budget-friendly dinner that still feels full of flavour.

Ingredients
 

  • 1 kg baby carrots
  • 1 onion
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 2 cups red lentils
  • 2 tbsp Moroccan seasoning
  • 1 L vegetable liquid stock
  • 1 cup Greek style thick and creamy natural yoghurt
  • 1 lemon
  • salt
  • pepper
  • olive oil

Method
 

  1. Cut your carrots into bite size pieces and pop into your air fryer, a little olive oil and a sprinkle of salt and cook for 15 mins 200C.
  2. In a saucepan with a little olive oil, cook your onion until soft.
  3. Add garlic, ginger, and red lentils, stir through and Moroccan seasoning.
  4. Stir for a minute and add stock.
  5. Simmer for 20 mins and the lentils are soft.
  6. Add in your roasted carrots.
  7. Add the zest and juice of a lemon.
  8. Use your immersion blender to blend until smooth.
  9. Serve with a dollop of Greek yoghurt.
  10. If you have any stale bread, air fry into croutons.
