Ingredients
 

  • 250 g unsalted butter
  • 2 cups white sugar
  • 1/2 cup evaporated milk
  • 2 cups salted peanuts
  • 1/2 cup salted peanuts
  • 250 g milk chocolate bits

Method
 

  1. In a saucepan, add evaporated milk, sugar, and 250 g butter.
  2. Pop it on medium heat and stir until the butter melts and the sugar dissolves.
  3. Bring it to a gentle boil, bubbling but not crazy.
  4. Keep it like that for 10 minutes, stirring every minute so it doesn’t burn.
  5. When it turns a lovely dark caramel colour, take it off the heat and stir through 2 cups of peanuts.
  6. Pour into a lined slice tin and spread it right to the edges.
  7. Melt chocolate chips in the microwave for about 1½ minutes, whisk till smooth, then pour over the caramel layer.
  8. Gently spread it out and sprinkle with the extra peanuts for crunch.
  9. Pop it in the fridge for a few hours until set.
  10. Slice into squares and dig in!
