Salty Peanut Caramel Slice
Ingredients
Method
- In a saucepan, add evaporated milk, sugar, and 250 g butter.
- Pop it on medium heat and stir until the butter melts and the sugar dissolves.
- Bring it to a gentle boil, bubbling but not crazy.
- Keep it like that for 10 minutes, stirring every minute so it doesn’t burn.
- When it turns a lovely dark caramel colour, take it off the heat and stir through 2 cups of peanuts.
- Pour into a lined slice tin and spread it right to the edges.
- Melt chocolate chips in the microwave for about 1½ minutes, whisk till smooth, then pour over the caramel layer.
- Gently spread it out and sprinkle with the extra peanuts for crunch.
- Pop it in the fridge for a few hours until set.
- Slice into squares and dig in!
