Spicy Chorizo Pilaf

Ingredients
 

  • 2 chorizo
  • 1 red onion
  • 1 tbsp crushed garlic
  • 2 tsp mild curried sausages recipe base
  • 1 cup garden peas
  • 1 lemon
  • 2 cups basmati rice
  • 2 tbsp beef flavour stock powder
  • 3 cups water
  • 1 bunch coriander leaves
  • 1 tbsp salted butter
  • 2 tbsp olive oil
  • salt
  • pepper

Method
 

  1. Dice chorizo into small pieces.
  2. In a hot pan with a little olive oil, sizzle your onion and chorizo.
  3. Once that has started sizzling, add garlic until onion is softened and sprinkle your mild curried sausage base mixture into the pan and mix it in.
  4. Pour in rice, beef stock powder, water and frozen peas into the pan.
  5. Once your water starts boiling, turn the heat down to low and pop a lid on.
  6. Let cook for 15 mins or until the water has been absorbed.
  7. Add in sliced coriander leaves, zest a lemon and butter, placing them in the pan.
  8. Squeeze a lemon over the pan.
  9. With a fork gently fluff up your rice and serve cracking salt and pepper over the top.
