Sunshine Salad

This sunshine salad is the kind of recipe that looks a bit fancy but takes barely any effort. Fresh tomatoes, creamy burrata and a spoonful of chilli crisp do all the heavy lifting, so you can throw it together in minutes and call it done.

It is perfect when you want something light, fresh and full of flavour without turning on the stove. Great as a side, a light lunch or one of those easy little dishes that makes the table feel a bit special.

It is quick, fresh and has that perfect mix of creamy, juicy and spicy. You only need a handful of ingredients, and there is no cooking involved.

Cut the tomatoes into bite-size pieces so they are easy to serve and eat. Spoon the chilli crisp over right before serving so everything stays fresh and glossy.

Serve it as a side dish with dinner, a light lunch, or pop it on the table when friends come over. A hunk of crusty bread on the side would not go astray.

Can I make sunshine salad ahead of time?

It is best served straight away so the tomatoes stay fresh and the burrata keeps its lovely texture.
