These air fryer salmon patties are made with canned salmon, sushi rice, nori and green onion, then coated in a crisp crumb. They’re easy, affordable, and a great way to turn pantry staples into a tasty dinner.

Ingredients
 

  • 1/2 cup sushi rice
  • 400 g tin salmon
  • 4 green onions
  • 3 nori seaweed sheets
  • 1 tbsp mayonnaise
  • 1 tbsp beef flavour stock powder
  • 1 cup plain flour
  • 1/2 cup panko breadcrumbs
  • 2 eggs

Method
 

  1. In a bowl, mix together drained salmon, sliced green onions and 3 crushed nori sheets in a bowl.
  2. Cook the rice as per packet instructions.
  3. Add beef stock powder and mayonnaise to the bowl and mix well.
  4. When combined, roll the mixture into 8 individual patties.
  5. Place foil on your board to make a crumbing station, cracking eggs into a bowl and whisk.
  6. Pour your flour onto one side of the foil and your breadcrumbs on the other side of the foil.
  7. Roll your patties in flour, then dip into your egg, then roll in panko.
  8. Create a well in the middle of the foil for your eggs and roll it up to avoid a messy clean up.
  9. Place a disposable liner in the air fryer, placing the 8 balls in an air fry for 12 mins on 200C, flipping half-way through.
  10. Serve on a plate with a squeeze of lemon.
