- 1/2 cup Sweet chilli 🌶️
- 2 tbsp Fish sauce 🐟
- 1/4 cup soy sauce 🧈
Coconut Rice
- 2 cups basmati rice 🍚
- 1 can 400g coconut milk 🥥
- 1 lime 🍋
- 1 tbsp chicken stock powder
- 1.5 cups water 💧
Instructions
Thai-style Chicken Mince
- Heat the oil: In a sizzling pan, add sesame or olive oil.
- Cook the chicken: Add the chicken mince to the pan and cook until it starts to look golden.
- Add garlic and ginger: Once the chicken is golden, add in the garlic and ginger. Stir and cook until their aroma fills your kitchen.
- Add green onions and slaw: Toss in the green onions and slaw, mixing them well with the chicken.
- Pour in the sauces: Add your trio of sauces to the pan and stir everything together.
- Final cook: Let it all cook together for another 3-5 minutes until everything is well combined and heated through.
- Serve: Your mouthwatering chicken mince is ready to devour!

Coconut Rice
- Prepare the saucepan: Get your saucepan out and place it on the stove.
- Add the rice: Toss in the rice into the saucepan.
- Slice the lime: Quickly slice the lime and drop it into the saucepan with the rice.
- Pour in liquids: Add the creamy coconut milk, chicken stock, and water to the saucepan.
- Stir: Give everything a good stir to mix the ingredients well.
- Heat the mixture: Turn on the heat and let the mixture cook until it starts to bubble.
- Cover and simmer: Secure the lid on the saucepan, lower the flame, and let it simmer.
- Check at 12 minutes: Around the 12-minute mark, check the rice to see the magic of perfectly cooked coconut lime rice.
