Air Fryer Greek Chicken and Vegetables

Ready for a dinner that’s packed with flavour and done in just 15 minutes? 😍 This air fryer Greek chicken and veggies is so easy, you’ll want it every night. Juicy chicken, fresh zucchini, capsicum, and red onion, all cooked up together with a tangy, herby Greek yoghurt marinade. Let’s do it!


Ingredients

  • 2 chicken breasts (cut in half lengthways)
  • 2 zucchini (sliced)
  • 1 capsicum
  • 1 red onion
  • 1/2 cup Greek yoghurt
  • 1 tbsp chicken stock powder
  • 1 tbsp crushed garlic
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp cumin
  • Juice of a lemon
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

  1. Mix Greek yoghurt, garlic, lemon juice, stock, oregano, thyme, and cumin in a bowl.
  2. Add your chicken to the mix and let it soak up all that delicious marinade while you prep the veg.
  3. Cut your capsicum, red onion, and zucchini into chunky pieces—perfect for two bites! Toss them with olive oil, salt, and pepper in the air fryer basket.
  4. Place the chicken on top of the veggies.
  5. Set your air fryer to 200°C and cook for 15 minutes.
  6. When done, don’t forget to drizzle that flavour-packed juice from the bottom of the air fryer over your chicken and veggies. Yum!
