Why You’ll Love Air Fryer Greek Chicken and Vegetables
Not only is this dish a total breeze to prepare, but it’s also incredibly versatile. The Air Fryer Greek Chicken and Vegetables gets that crispy-on-the-outside, juicy-on-the-inside texture without needing loads of oil. Plus, the vibrant veggies pair so well with the rich tang of the Greek yoghurt marinade. And let’s face it, anything that’s done in 15 minutes is a weeknight win. Now, if you’re like me and love experimenting with your air fryer, you’ll be amazed at how well it handles this dish. The chicken stays moist, the veggies develop a slight char for extra flavour, and the clean-up? Minimal. I mean, who has time for scrubbing pots and pans after a long day, right? 😉
Tips & Tricks for the Best Air Fryer Greek Chicken and Vegetables
- Marinating Magic: While this dish is great as a quickie, if you’ve got time, let the chicken marinate for at least 30 minutes or even overnight. The Greek yoghurt helps tenderise the meat and infuses it with all those yummy herbs and lemony goodness.
- Choose Your Veggies Wisely: I’ve gone with zucchini, capsicum, and red onion for their quick cooking times and ability to hold flavour. But don’t be shy to switch things up! Eggplant, cherry tomatoes, or even some sweet potato cubes would work just as well. 🍆🍅
- Don’t Skip the Drizzle: After everything’s cooked, you’ll notice a bit of juice at the bottom of your air fryer basket. This is pure gold! Drizzle it over your chicken and veggies for an extra hit of flavour.
- The Best Ingredients for Success: Use full-fat Greek yoghurt for a richer marinade. Also, opt for fresh lemon juice over bottled—it makes a big difference in that bright, tangy kick.
Serving Suggestions
- Serve with pita bread: Warm up some pita and use it to scoop up the juicy chicken and veggies. Or make it a DIY gyro!
- Add a side of tzatziki: Because nothing beats extra sauce, am I right? The coolness of tzatziki complements the warm, spicy chicken perfectly. 🥒🍽️
- Pair with a salad: A simple Greek salad on the side is a no-brainer. The fresh crunch from the cucumbers, tomatoes, and olives will pair beautifully with the warm air fryer Greek chicken and vegetables.
- Rice or couscous: If you’re looking to bulk up the meal, a side of fluffy rice or couscous will soak up all those delicious flavours and make it even heartier.

I marinated the chicken all day and wanted to lick the bowl (but chicken no). BUT stupid me put a lid on the dish and baked it!! So much liquid. Took lid off and browned the top. The flavour was magnificent. I’ll keep the juice for stock. I will definitely make this again but bake it instead.
I have made this recipe 3 times since I found it. It is so full of flavour and the chicken comes out so tender. It is sooo good! Love it and so does my husband!! Win win!!
This was definately so easy and soooo tasty
