This no-bake chocolate pistachio slice looks like it came from a fancy patisserie, but it is genuinely easy and there is no oven involved. A buttery biscuit base, a rich pistachio layer with a surprise salty crunch, and a smooth, glossy chocolate top, all set in the fridge.
Here is the fun part, the crunch in that pistachio layer comes from salted French fries folded through the paste. It sounds unexpected, but that salty, crunchy hit against the sweet pistachio and chocolate is exactly what makes this slice so moreish.
You chill it, slice it, and watch it disappear. It is a real crowd pleaser for how little work it takes, and the salty pistachio twist always gets people asking.
Why You’ll Love It
There is no baking at all, the fridge does the setting, so it is a great warm weather or no-oven dessert. It looks impressive and a little fancy, but it is built in simple layers, a biscuit base, a salty pistachio layer and a glossy chocolate top. The salted French fries folded through the pistachio give it an unexpected crunch and a sweet-salty balance that keeps you reaching for more, and it makes a big batch of 24, perfect for a party or a gift.
The Shortcut That Makes It Work
No oven, just the fridge. You blitz a quick biscuit base, spread a pistachio layer over it, pour a simple melted chocolate and cream topping on top, and let the fridge set it firm. There is no baking, no tempering, just layer, chill and slice.
Handy Tips
Press the biscuit base in firmly so it holds when you cut it, and give each layer a little time to firm in the fridge before adding the next so they stay distinct. Warm the pistachio paste for about 30 seconds if it is stiff, then fold the salted French fries through it so the crunch is spread evenly. For the chocolate top, whisk the melted chocolate and cream until smooth and glossy, then smooth it over. Let the whole slice set fully before cutting, and a warm, dry knife gives the cleanest squares.
What To Serve With It
It is a rich little slice, lovely as is with coffee. A few extra chopped pistachios on top add crunch and make it look the part.
Leftovers / How to Store It
Keep the slice in an airtight container in the fridge for up to 5 days. It is a fridge slice, so serve it chilled, and it can also be frozen if you want to make it further ahead.

Why are there French fries in this dessert?
It sounds odd, but salted French fries are the secret to the crunch. Folded through the pistachio paste, they add texture and a salty hit that balances the sweet chocolate and pistachio. You do not taste them as chips, just a lovely salty crunch.
Do I need an oven for this slice?
No. It is a completely no-bake slice. Everything sets in the fridge, so it is ideal for warm days or when the oven is busy.
How do I get clean slices?
Let the slice set fully in the fridge, then use a warm, dry knife and wipe it clean between cuts. A chilled, fully set slice cuts far more neatly.
Can I make it ahead?
Yes. It keeps for up to 5 days in the fridge and can be frozen, so it is a good make ahead for parties and gatherings.
Can I add extra pistachios on top?
Definitely. A scatter of chopped pistachios over the chocolate top adds crunch and makes it look the part.

This was quick and easy to make and the family loved it. Even with the cost of the pistachio paste it is much cheaper (and nicer) than most of the Dubai chocolate that you can buy.
Have done this a couple of times now, just not sure what size tray it needs to be in, as last time I had to use double the amount of chocolate
Hi Sue, I used a 19cm x 28cm slice tin. Thanks for pointing it out. I’ve updated the instructions.
I made this slice. It tastes great. I found the biscuit base was still crumbly and didn’t set firmly even though I pressed it as firmly as I could.
Hi Marianne, so glad you loved the taste. For a firmer base, press it really firmly using the flat bottom of a glass or measuring cup rather than just your hands. Try popping the base in the freezer or a little longer in the fridge until it is firmly set. Hope that helps.
