Mini BBQ Meatloaves

These little meatloaves are such a good one when you want a proper comfort-food dinner without making a giant meatloaf that takes forever to serve. Everyone gets their own little one, there’s plenty of BBQ sauce, and it all feels a bit fun without being extra work.

They’re easy, hearty and perfect with mashed potato and steamed veg on the side. Proper family dinner stuff, and a handy one for nights when you want something simple that still feels like a real meal.

They’re easy to make, full of flavour and already portioned out, which makes dinner dead simple. The BBQ sauce keeps them nice and saucy, and serving them with mash and veg turns it into a proper comfort-food plate.

Use enough breadcrumbs so the mixture holds together nicely when you press it into the tin. Press the mince balls down gently so they keep their shape, and don’t be shy with the extra BBQ sauce on top.

Serve them with mashed potato and steamed veg for an easy all-round dinner. They’d also be handy with a simple salad if you wanted to keep things a bit lighter.

These mini BBQ meatloaves are easy, hearty and packed with simple flavour. Made with beef mince and plenty of BBQ sauce, they bake up into handy individual portions that are perfect for family dinners. Serve them with mashed potato and steamed veg for a proper comfort-food meal.

Ingredients
 

  • 500 g beef mince
  • 1 onion
  • 1 tbsp crushed garlic
  • 1 tbsp dried thyme
  • 1 tbsp beef stock powder
  • breadcrumbs
  • 1 bottle BBQ sauce marinade
  • 1 cup BBQ sauce
  • mashed potato
  • steamed veg

Method
 

  1. Pop the mince, onion, garlic, thyme, stock powder and breadcrumbs into a bowl.
  2. Mix it all together, then divide into 6 balls.
  3. Grab a Texas muffin tin.
  4. Pour about 3 tbsp BBQ sauce marinade into the bottom of each hole.
  5. Pop a mince ball on top and press it down.
  6. Smother the top of each one with extra BBQ sauce.
  7. Pop in the oven at 180°C for 30 minutes.
  8. Serve with mashed potato and steamed veg.
