Mini BBQ Meatloaves
These little meatloaves are such a good one when you want a proper comfort-food dinner without making a giant meatloaf that takes forever to serve. Everyone gets their own little one, there’s plenty of BBQ sauce, and it all feels a bit fun without being extra work.

Mini BBQ Meatloaves
Method
- Pop the mince, onion, garlic, thyme, stock powder and breadcrumbs into a bowl.
- Mix it all together, then divide into 6 balls.
- Grab a Texas muffin tin.
- Pour about 3 tbsp BBQ sauce marinade into the bottom of each hole.
- Pop a mince ball on top and press it down.
- Smother the top of each one with extra BBQ sauce.
- Pop in the oven at 180°C for 30 minutes.
- Serve with mashed potato and steamed veg.
