- Grab a baking dish and mix in the crushed garlic, chicken stock powder, and water. Give it a good stir.
- Now toss those diced potatoes into the dish, spreading them out evenly.
- Arrange your beautiful, thinly sliced lemon pieces on top of the potatoes for an added citrus punch!
- Now, the star of our dish! Nestle your chicken thighs right on top of those lemon slices. It's all coming together!
- Let's get seasoning! Sprinkle some salt and pepper and drizzle olive oil for that perfect finish. Don't hold back on this part; this is where the magic happens!
- Finally, cover with some foil and place the dish in a preheated oven at 200°C and bake it for about 30 minutes, remove the foil and cook for another 10 to 15 minutes to brown your chicken.


Can you use chicken breast?
Everyone in the family really enjoyed this, we will definitely be making again. My partner (Greek Cypriot) was taken back to his childhood, this was a staple recipe for his dad!
I made it for 5 people and used 2 and a bit times the ingredients across 2 dishes – 10 thighs (with bone in and skin on), 8 spuds, 3 lemons. Added 10 mins covered and another 10 uncovered and came out perfect.
The only reason I’m not giving 5 stars is I felt like I was flying blind with the recipe from when I was buying the thighs (fillets, bone in, skin on or off?) through to dicing the spuds (no idea what size). Only as I was putting it in the oven I found the video at the end! A bit more info in the actual recipe would help.
Next time I’ll add a bit of salt to the potatoes, but I’ll stick with the bone in the thighs as it worked out beautifully.

Loved the recipe however it took far longer to cook than stated, took 1.5 hours at 200 degrees C. I was checking every 15 minutes and the potatoes were only just cooked. My oven is new and has been spot on for other recipes.
Hi Sue, thanks for letting me know, and sorry it took so much longer. Potato size makes a big difference here. Try dicing them smaller (around 2cm) helps them cook through in the time. It’s also worth checking your oven with an oven thermometer. Some ovens run cooler than the dial suggests, especially with a covered dish. Hope that helps.
