Hey there, food lovers! 🍴✨ I’m super excited to share with you Day 9 of my 10-day tray bake series! Today, we’re whipping up a delicious Baked Frittata that’s perfect for any meal of the day. πŸ˜‹πŸ³

Ingredients

  • 2 chorizo sausages, sliced
  • 1 capsicum, diced
  • 1 onion, diced
  • 250g mushrooms, sliced
  • Salt and pepper to taste
  • Drizzle of olive oil
  • 1 cup milk or cream
  • 6 eggs
  • 1 cup grated cheese

Instructions

  1. Preheat your oven to a toasty 220C πŸ”₯.
  2. In a baking dish, combine your chorizo, capsicums, onion, and mushrooms. Season with salt, pepper, and a generous drizzle of olive oil. Toss it all together to make sure everything is well coated.
  3. Pop the dish into the oven and let it roast for about 10 minutes.
  4. Meanwhile, beat your eggs with the milk. This is the creamy mixture that will bind everything together in a fluffy delight.
  5. Take the dish out of the oven, reduce the temperature to 180C, and carefully pour over your egg mixture. Sprinkle the top with cheese, because we all deserve that extra cheese in the morning!
  6. Slide the dish back into the oven and bake until it’s golden brown and set – about 25 minutes.
