Ingredients

  • 🍗 4 chicken thighs
  • 🍚 1/4 cup plain flour
  • 🌰 1 diced onion
  • 🧄 1 tbsp crushed garlic
  • 🌱 1 tbsp crushed ginger
  • 🍚 1 cup long grain rice
  • 🥥 1 can coconut cream
  • 💧 1/2 cup water
  • 🥣 1 tbsp chicken stock powder
  • 🥔 2 medium potatoes diced and cooked
  • 🌱 1 cup peas
  • 🌶️ 2 tbsp curry powder
  • 🔥 1 tsp chilli powder

Instructions

  1. Season your chicken with salt and pepper, then give it a good flour roll. 🍗
  2. Get those thighs sizzling in olive oil until they’re a scrumptious golden brown.
  3. Take out the chicken and toss in your onion, garlic, and ginger. Cook until that onion turns soft and sweet. 🌰🧄
  4. Time for some hydration! Add the chicken stock to 1/2 cup water and pour in to embrace those tasty brown bits from the pan.
  5. Rice time! 🍚 Add it in with the coconut cream, water, and curry powder. Mix it up! 🥄

  7. Lower the heat, cap it off, and let those flavors mingle for about 20 mins or until the rice is perfectly fluffy.
