This is the perfect meal prep Sunday recipe. This is a great take to work lunch or a quick easy dinner. Have it on its own or with a salad or some veggies.

- Pour the mixture into a lined pie dish. Flatten it out and, if you’re using it, top with those lovely tomato slices.
- Pop it in the oven and bake at 180°C for about 50 minutes.
