Ravioli Soup

Hey there, food lovers! Today is day 7 of our 15 minute meals.🍲 Let’s dive into a comforting bowl of Ravioli Soup today. Not your ordinary soup, this one is loaded with flavor, fun, and of course, ravioli!


Ingredients

Units Scale
  • 500g of your favorite Ravioli
  • 1 litre Beef stock + 2 cups water 🥩
  • 500g Diced veg 🥦🥕
  • 2 tbsp Tomato paste 🍅
  • 1/2 cup sliced Kalamata olives
  • 1/2 cup diced parsley 🌿
  • 2 red chilies sliced (for the brave-hearted) 🔥

Instructions

  1. Drizzle some olive oil in a hot pot and toss in the veg. Sizzle them until they’re just tender.
  2. Stir in that rich tomato paste and let it meld for a minute.
  3. Time for the beef stock and a splash of water. Once it’s bubbling, in goes the ravioli. Follow your ravioli packet’s timing advice here! ⏲
  4. Turn off the heat and add your olives and parsley. 5. Feelin’ fiery? Add those optional chilies. Stir it all up and pour into bowls.
  5. Feeling cheesy? 🧀 Sprinkle with Parmesan and dive in!
