Veggie Loaded One Cup Quiche

🌿 I’m sharing my go-to recipe for a Veggie-Loaded One Cup Crustless Quiche that’s as easy as it is delicious. 🥕🥒

This is the perfect meal prep Sunday recipe.  This is a great take to work lunch or a quick easy dinner.  Have it on its own or with a salad or some veggies.

Here’s what you need to make magic happen in your kitchen:


Ingredients

  • 🥕 1 cup grated carrot
  • 🥒 1 cup grated zucchini
  • 🥔 1 cup grated potato
  • 🧅 1 cup diced onion
  • 🥓 1 cup diced bacon
  • 🍚 1 cup self-raising flour
  • 🥚 1 cup of eggs (that’s about 5 eggs)
  • 🧀 1 cup grated cheese
  • 🧂 Tsp of salt and pepper
  • 🍅 1 sliced tomato (optional, but oh-so-pretty for the top!)

Instructions

  1. Grab a large bowl and toss in all your ingredients (except the tomato). Give everything a hearty mix to combine all those vibrant veggies and flavours.
  2. Pour the mixture into a lined pie dish. Flatten it out and, if you’re using it, top with those lovely tomato slices.
  3. Pop it in the oven and bake at 180°C for about 50 minutes.
