Ingredients
 

  • 1 cup grated carrot
  • 1 cup grated zucchini
  • 1 cup grated potato
  • 1 cup diced onion
  • 1 cup diced bacon
  • 1 cup self-raising flour
  • 1 cup eggs that’s about 5 eggs
  • 1 cup grated cheese
  • 1 tsp of salt and pepper
  • 1 sliced tomato optional, but oh-so-pretty for the top!

Method
 

  1. Grab a large bowl and toss in all your ingredients (except the tomato). Give everything a hearty mix to combine all those vibrant veggies and flavours.
  2. Pour the mixture into a lined pie dish. Flatten it out and, if you’re using it, top with those lovely tomato slices.
  3. Pop it in the oven and bake at 180°C for about 50 minutes.

FAQs

Can I make it vegetarian?

Yes. Leave out the bacon and add a little extra grated veg or cheese in its place. It is still hearty and full of flavour.

Can I use different vegetables?

Definitely. This is a great use-what-you-have recipe. Grated pumpkin, corn or capsicum all work, just keep the total roughly the same so the mix holds together.

Why did my quiche turn out wet?

Zucchini and potato hold a lot of water. Squeeze the grated veg well before it goes in, and give it the full baking time until it is set.

Can I eat it cold?

Yes. It is lovely cold, which makes it perfect for lunchboxes and picnics as well as a hot dinner.
