Ingredients
  

  • 1 cup bread crumbs
  • 2 eggs
  • 1 large onion
  • 1 large carrot
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp thyme
  • 1 tbsp oregano
  • 1/4 cup tomato sauce
  • Salt and pepper to taste
  • 1 kg beef mince
  • 200 g diced bacon
  • 🍅**BBQ Sauce:**
  • 1/2 cup tomato sauce
  • 1/4 cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp thyme
  • 1 tsp oregano

Method
 

  1. Preheat your oven to 180°C (356°F).
  2. In a food processor, combine the carrot, onion, bread crumbs, and eggs. Whizz until it forms a fine mixture, almost like a purée.
  3. Add the beef mince, diced bacon, smoked paprika, garlic powder, onion powder, thyme, oregano, tomato sauce, salt, and pepper to the food processor. Whizz again until everything is well combined.
  4. Transfer the mixture to a loaf tin, pressing it down firmly.
  5. Bake in the preheated oven for 30 minutes.
  6. While the meatloaf is baking, whisk together all the ingredients for the BBQ sauce in a bowl.
  7. After 30 minutes, pour the BBQ sauce over the meatloaf and return it to the oven for another 30 minutes.
  8. Once done, let your meatloaf rest for 10 minutes before slicing. This helps it to hold its shape.
