🌮 Exciting Mexican Meatballs Tray Bake! 🌶️ Here's my go-to recipe for a flavor-packed fiesta in a tray! 🎉

Ingredients
  

  • 2 red onions large dice
  • 2 red capsicum large dice
  • 1 kg meatballs
  • 1 packet taco seasoning or DIY blend: 2 tbsp smoked paprika 1 tbsp oregano, 1 tbsp cumin, 1 tsp garlic powder, 1 tsp onion powder
  • 1/4 cup olive oil
Optional toppings:
  • 1 block feta cheese crumbled
  • 2 green onions sliced

Method
 

  1. Preheat the oven to 200°C
  2. In a baking dish, toss in the diced onions, capsicum, and the star of the show – those juicy meatballs!
  3. Sprinkle the homemade taco seasoning or spice blend evenly over the goodies. Drizzle with that liquid gold aka olive oil.
  4. Time to get hands-on! Toss everything together until each bite is coated in a symphony of flavors.
  5. Pop it into the oven for 30 minutes. While it's sizzling away, crumble that feta and slice those green onions for the grand finale.
  6. Ding! The kitchen is filled with aromatic goodness. Sprinkle the feta and green onions over the tray bake.
