Hey there peeps! 🌟 Ready for another tantalizing 15-minute dinner from my series?  We are up to day 3 and tonight, we're diving into Thai-inspired flavors with some scrumptious Thai-style chicken mince. 🍗🌶️

Ingredients
  

Thai-style Chicken Mince
  • 500 g Chicken mince
  • 1 tbsp crushed garlic 🧄
  • 1 tbsp crushed ginger
  • 2 sliced Green onions
  • 1 pkt 250g dry slaw 🥬
  • 1/2 bunch fine sliced Coriander 🌱
  • 1/2 cup Sweet chilli 🌶️
  • 2 tbsp Fish sauce 🐟
  • 1/4 cup soy sauce 🧈
Coconut Rice
  • 2 cups basmati rice 🍚
  • 1 can 400g coconut milk 🥥
  • 1 lime 🍋
  • 1 tbsp chicken stock powder
  • 1.5 cups water 💧

Method
 

Thai-style Chicken Mince
  1. Heat the oil: In a sizzling pan, add sesame or olive oil.
  2. Cook the chicken: Add the chicken mince to the pan and cook until it starts to look golden.
  3. Add garlic and ginger: Once the chicken is golden, add in the garlic and ginger. Stir and cook until their aroma fills your kitchen.
  4. Add green onions and slaw: Toss in the green onions and slaw, mixing them well with the chicken.
  5. Pour in the sauces: Add your trio of sauces to the pan and stir everything together.
  6. Final cook: Let it all cook together for another 3-5 minutes until everything is well combined and heated through.
  7. Serve: Your mouthwatering chicken mince is ready to devour!
  8. But wait, we can't have Thai-style chicken without some fluffy coconut rice! 🍚🥥

  10. Prepare the saucepan: Get your saucepan out and place it on the stove.
  11. Add the rice: Toss in the rice into the saucepan.
  12. Slice the lime: Quickly slice the lime and drop it into the saucepan with the rice.
  13. Pour in liquids: Add the creamy coconut milk, chicken stock, and water to the saucepan.
  14. Stir: Give everything a good stir to mix the ingredients well.
  15. Heat the mixture: Turn on the heat and let the mixture cook until it starts to bubble.
  16. Cover and simmer: Secure the lid on the saucepan, lower the flame, and let it simmer.
  17. Check at 12 minutes: Around the 12-minute mark, check the rice to see the magic of perfectly cooked coconut lime rice.
  18. Serve together, and voila! A Thai feast in 15 minutes! 🥳
