Ingredients
  

  • 150 g melted butter
  • 250 g scotch finger biscuits
  • 2 pkts lime jelly crystals
  • 1 cup boiling water
  • 500 g cream cheese
  • 300 g whipped cream
  • 3 large diced mangos or 4 cups diced frozen mango

Method
 

  1. Crush those biscuits and mix them up with the melted butter.
  2. Get it all pressed into a lined springform tin and pop it into the fridge.
  3. Dissolve those zesty lime jelly crystals with boiling water.
  4. Smoothly blend in the cream cheese.
  5. Stir in the whipped cream and most of your diced mango.
  6. Pour this luscious blend over your biscuit base, smoothen and chill.
  7. Once it's all set, crown it with the rest of the mango and dive in! 😋
