Ingredients
  

  • 1 cup plain flour
  • 1 cup whole rolled oats
  • 1/2 cup shredded coconut
  • 3/4 cup brown sugar
  • 1 teaspoon baking powder
  • Pinch of salt
  • 125 g butter melted
  • 1 egg
  • Splash of vanilla
  • 1 cup mix-ins think chocolate chips, nuts, dried fruit—whatever you fancy!

Method
 

  1. Pop everything into a bowl and give it a good mix.
  2. Press into a lined square tin
  3. Bake at 180°C for 25 minutes.
  4. Let it cool, then cut into snack-sized slices. Enjoy!
