Ingredients
 

  • 1 cup plain flour
  • 1 cup whole rolled oats
  • 1/2 cup shredded coconut
  • 3/4 cup brown sugar
  • 1 teaspoon baking powder
  • Pinch salt
  • 125 g butter melted
  • 1 egg
  • Splash of vanilla
  • 1 cup mix-ins think chocolate chips, nuts, dried fruit—whatever you fancy!

Method
 

  1. Pop everything into a bowl and give it a good mix.
  2. Press into a lined square tin
  3. Bake at 180°C for 25 minutes.
  4. Let it cool, then cut into snack-sized slices. Enjoy!

Can I change the mix-ins?

Absolutely, that is the fun of it. Choc chips, chopped nuts, dried fruit, seeds or a mix all work. Keep it to about a cup so the slice still holds together.

How do I stop it falling apart when I cut it?
