This is the easy oat slice you will make on repeat, because it is genuinely one bowl and you can take it any direction you like. Everything goes in together, gets a good mix, pressed into a tin and baked. That is it.
The base is a chewy, lightly sweet oat slice, and the cup of mix-ins is where you make it yours, choc chips, nuts, dried fruit, whatever you fancy. It is perfect for lunchboxes and afternoon snacks.

Handy Tips

Can I change the mix-ins?
Absolutely, that is the fun of it. Choc chips, chopped nuts, dried fruit, seeds or a mix all work. Keep it to about a cup so the slice still holds together.
How do I stop it falling apart when I cut it?
Press the mix in firmly before baking and let the slice cool completely in the tin before slicing. Cutting it warm is usually why it crumbles.
Can I make it gluten-free?
You can adapt it. Use a gluten-free plain flour and make sure your oats are certified gluten-free, as regular oats can pick up gluten during processing. This changes the recipe from the original, so the texture may vary a little.
Can I freeze it?
Yes. It freezes well. Cool completely, then freeze in a container and thaw as you need it, which makes it handy for lunchboxes.

Do you think I can just make them as cookies instead of a slice?
Hi Karen, yes, go for it. This dough is sturdy, so it’ll only spread a little as it bakes. I’d roll it into balls and press them down gently before baking (not flat) for a nice even cookie shape. They’ll bake quicker than the slice, so check them around 12 to 15 minutes until golden at the edges. Let me know how they turn out.
Could I add chopped walnuts as well as choc chips ? If so how much could I add and would all other ingredients stay same?
Hi Jenny, absolutely, you can halve the choc cips and add chopped walnuts so you have a cup in total. You can add chopped walnuts to the 1 cup of choc chips as well if you want, but if you find the mixture a bit dry then you will have to adjust more of the wet ingredients to bring it back together. Let me know how it goes.

Made these today and they are yummy. I had no brown sugar so used raw sugar instead. My 1 cup of extras was a combo of both choc buds and sultanas. Great snack to have on hand when the grandkids are over.
I have made this numerous times and it always turns out great. Bake with added walnuts, dried chopped cranberries and seeds. I also substitute sugar with stevia.
This freezes well and is a great grab and go snack
