  2. One-Pan Magic: Fewer dishes? Yes, please! Everything cooks in one pan, making clean-up a breeze.

  4. Customisable: This recipe is a fantastic base that you can easily customise to suit your taste. Add extra veggies, swap out the protein, or even mix in some coconut milk for a creamy twist.

The Secret to Success: Quality Ingredients 🌿

When it comes to a recipe with just a handful of ingredients, quality is key. Here’s what to look for:

    • Chicken: Opt for free-range chicken for the best flavour and texture. Whether you choose thighs, drumsticks, or even breasts, ensure they’re fresh and well-seasoned before browning.
    • Basmati Rice: Long-grain basmati rice is ideal for this dish, thanks to its light, fluffy texture. It absorbs the red curry sauce beautifully without becoming mushy.
    • Stir-Fry Vegetables: A frozen stir-fry vegetable mix is a convenient choice here. Go for a mix that includes colourful veggies like carrots, broccoli, snap peas, and capsicum to add variety in texture and taste.
    • Red Curry Paste: The red curry paste is the hero ingredient in this dish, so choose a high-quality brand that you love. If you prefer a milder curry, you can adjust the amount to suit your taste.

4 Ingredient Chicken and Red Curry Rice Tips & Tricks

  1. Browning the Chicken: Don’t skip this step! Browning the chicken before adding it to the rice and veggies not only adds depth of flavour but also gives the chicken a lovely colour. Remember, you’re just searing it, not cooking it all the way through.
  2. Toast the Curry Paste: Letting the curry paste cook in the pan for a couple of minutes before adding the other ingredients helps to develop its full flavour. This step ensures the dish has a rich, aromatic base.
  3. Even Cooking: To ensure everything cooks evenly, spread the rice out in the pan and lay the chicken pieces on top. This method helps the rice cook through without sticking, and the chicken finishes cooking in the steam from the simmering water.

How to Serve Your 4 Ingredient Chicken and Red Curry Rice 🍽️

This 4 Ingredient Chicken and Red Curry Rice is a meal in itself, but if you want to make it extra special, here are a few serving suggestions:

    • Garnish with Fresh Herbs: A sprinkle of fresh coriander or Thai basil on top adds a burst of colour and freshness.
    • Add a Squeeze of Lime: A wedge of lime on the side brightens up the dish with a bit of tang.
    • Pair with a Salad: Serve alongside a simple green salad with a light vinaigrette to balance the richness of the curry.
    • Serve with Naan or Roti: A piece of warm naan or roti is perfect for scooping up every last bit of that delicious curry.

Ingredients

Units Scale
  • 8 pieces of chicken (any cut you like)
  • 1.5 cups basmati rice
  • 800g frozen stir-fry vegetables
  • 3 tbsp red curry paste
  • 3 cups water

Instructions

  1. Season your chicken with a sprinkle of salt, a dash of pepper, and a drizzle of olive oil. Then, pop it into a hot pan to brown both sides. Don’t stress about cooking it through just yet—we’ll handle that later. Once browned, remove the chicken from the pan.
  2. Spice it up! In the same pan, add your red curry paste and let it cook for 2 minutes while stirring. This step will really wake up those flavours!
  3. Rice time! Add the basmati rice to the pan and stir it around, making sure each grain gets a good coat of that delicious curry paste.
  4. Add the essentials. Pour in 3 cups of water and give the bottom of the pan a good scrape to loosen up all those yummy bits stuck to the pan. This will add even more flavour to your dish!
  5. Veggie power! Spread your frozen stir-fry vegetables over the top, then place your browned chicken pieces back on top.
  6. Cook to perfection. Pop a lid on your pan, turn the heat down to low, and let it cook for 25 minutes. After that, check the rice—if it’s not quite there, give it another 5 minutes with the lid on.
