  • 3 diced carrots
  • 3 diced onions
  • 3 diced celery sticks
  • 2 tins (800g) diced tomatoes
  • 1 litre beef stock
  • 3 tbsp tomato paste
  • 1 jar (750ml) tomato passata
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary

Instructions

  1. In a hot pan with some olive oil, brown your beef heavily on both sides.
  2. Remove the beef from the pan and pour in the beef stock to deglaze, making sure to scrape up all those tasty brown bits from the bottom.
  3. In your slow cooker or pot, add tomato paste, tomatoes, passata, herbs, and stock. Give it a little whisk.
  4. Add your beef and vegetables.
  5. If using a slow cooker, cook on low for 8 hours or high for 4 hours. Alternatively, you can pop it in your oven at 160°C for 2.5 hours.
