This 3 ingredient banana bread is about as easy as baking gets. Overripe bananas, a can of condensed milk and self-raising flour, with a little cinnamon, mixed into a batter and baked into a moist, sweet loaf. No butter, no sugar to measure out.

It is a great way to use up bananas that are past their best, and makes a loaf that serves eight. Lovely warm with butter, or toasted the next day.

Why You’ll Love It

This one’s a keeper. It’s just a few simple ingredients and a great way to use up overripe bananas, with no butter or sugar to measure. It’s moist and sweet, and lovely warm or toasted.

The Shortcut That Makes It Work

Condensed milk is the trick. It brings all the sweetness and moisture so there is no sugar or butter to measure, just three things mixed into a loaf and baked.

Handy Tips

Use bananas that are really overripe, the spottier the better, for the most flavour and sweetness. Mash the bananas well, or blitz them in a food processor for a smoother loaf. Mix until just combined so the loaf stays tender. Test with a skewer or knife, it should come out clean when done. Start checking around the 40-minute mark.

Make It Your Way

Add a handful of chocolate chips or chopped walnuts to the batter. Stir through a little extra cinnamon or some mixed spice. Bake it as muffins instead, reducing the cooking time to suit.

How to Store It

Keep it in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. It also freezes well, sliced, for up to 3 months, so you can toast a slice straight from frozen.
