Ingredients
 

  • 500 g diced chicken thigh
  • 1 diced onion
  • 2 cups chicken stock
  • 300 ml cream
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3 tbsp flour
  • 50 g butter
  • 1 large head of broccoli diced (1cm pieces)
  • 1 cup tasty cheese
  • 300 g fresh lasagna sheets
  • 1 cup mozzarella

Method
 

  1. Season diced chicken with salt and pepper.
  2. Heat a pan with a splash of oil and brown the chicken in batches.
  3. Add butter and onion, cooking until soft.
  4. Stir in spices, sprinkle over flour, and mix well.
  5. Pour in stock and cream, stirring until combined.
  6. Once bubbling, add broccoli and tasty cheese. Mix until the cheese melts, then remove from heat.
  7. Spread a ladle of chicken mix in a lasagna dish.
  8. Layer with lasagna sheets, then 1/3 of the chicken mix. Repeat 2 more times.
  9. Sprinkle with mozzarella, cover with baking paper, then foil.
  10. Bake at 180°C for 30 minutes.
  11. Remove foil and paper, bake another 10-15 minutes until golden.
  12. Let it sit for 10 minutes before serving.
  13. Serve with a fresh green salad and enjoy!
