Chicken Bacon Casserole Why This is an Absolute Winner

If you’ve ever wondered how to bake chicken with bacon in a way that’s both delicious and simple, this recipe is the answer. It’s a one-pot dish (less washing up – yay!), it’s packed with flavour, and it uses pantry staples that you probably already have at home.

The creamy base is made with milk, Dijon mustard, garlic and cheese – seriously, how could that not be good? Add crispy bacon, juicy chicken thighs, sweet corn and a crunchy breadcrumb topping, and you’ve got a complete meal that ticks every box: flavour, texture, comfort and convenience.

Tips & Tricks to Nail Your Chicken Bacon Casserole Every Time

Want to take this already fabulous casserole to the next level? I’ve got you!

Use Chicken Thighs

Chicken thighs are juicy, tender and far more forgiving than breast meat. They hold up well in baking, staying moist even after the dish is in the oven. If you’ve only got chicken breast, just be sure not to overcook it in the browning stage.

Go for Streaky Bacon

You want that rich, smoky flavour and crispy finish. Streaky bacon has the perfect fat-to-meat ratio and adds that drool-worthy savoury element to the dish.

Don’t Skip the Garlic and Dijon

The combo of garlic and Dijon mustard gives depth and a subtle zing that balances the richness of the cheese and bacon. If you like a bit of heat, a pinch of chilli flakes wouldn’t go astray either!

Fresh or Frozen Corn – Your Call

I often use frozen corn kernels because they’re convenient and sweet. But if corn is in season, fresh kernels straight off the cob bring a bit of a pop that’s just divine.

The Best Cheese?

Pizza cheese mix is perfect here – it usually contains a blend of mozzarella, cheddar and maybe a little parmesan. It melts like a dream and has just the right amount of stretch and flavour.

Chicken Bacon Casserole Serving Ideas

This chicken bacon casserole is a full meal in itself, but if you want to jazz it up, here are some serving suggestions:

    • A simple green salad with a lemon vinaigrette cuts through the richness beautifully

    • Serve it alongside roasted veggies like zucchini, carrots or pumpkin for added colour and nutrients

    • A glass of chilled Chardonnay or a light Pinot Noir pairs wonderfully with the creamy, cheesy base

    • And for the little ones? Add a side of garlic bread or rice – they’ll be chuffed!

Storage Options – Keep the Casserole Coming All Week!

This chicken casserole stores like a champ, making it a brilliant meal prep option.

In the Fridge:

Let it cool completely, then store it in an airtight container. It’ll keep well for up to 4 days.

In the Freezer:

Portion it into freezer-safe containers and freeze for up to 2 months. Defrost overnight in the fridge and reheat in the oven or microwave until piping hot. If the top’s lost its crunch, pop it under the grill for a few minutes to crisp it back up.
