Cooked low and slow for 6-8 hours, this brisket becomes melt-in-your-mouth tender. The secret? A bold espresso-infused sauce made with Coffee Beans, BBQ Sauce, and Balsamic Vinegar. Every bite is packed with rich, smoky, and slightly sweet flavors!

Ingredients
- 1.5kgs Jindurra Station Beef Chuck Casserole
- 1 tsp Stone Mill Garlic ground
- 1 tsp Stone Mill Onion powder
- Stone Mill Black Peppercorns
- Stone Mill Salt
- The Olive Tree Olive Oil
- 3/4 cup of Lazzio Espresso Coffee Beans (4 shots)
- 3/4 cup Colway BBQ Sauce
- 2 tbsp Remano Balsamic Vinegar
- 3 tbsp Colway Worcestershire Sauce
- 1/2 cup White Mill Brown Sugar
- 3 tbsp Bramwells Honey
- Bakers Life – Premium Burger Buns
Ranch Sauce
- 150ml Farmdale Sour Cream
- 1/4 cup Colway Traditional Mayonnaise
- 1/4 tsp Stone Mill Garlic powder
- 1/4 tsp Stone Mill Onion powder
- 1/4 tsp Stone Mill Sweet Paprika
- 1 small Stone Mill crushed Garlic
- 1 tbsp Pure Vita White Vinegar
- 1/2 Lemon – juice
- Stone MIll Black Pepper and Salt to taste
- Finely chopped The Good Stuff fresh Chives
- Finely chopped fresh The Good Stuff Dill sprigs
Instructions
- Mix together Onion powder, Garlic ground, and Salt & cracked Pepper to make the rub.
- Rub the spice rub over the entirety of the Beef.
- Set a pan to high heat, add a little Olive Oil, and then searing both sides of the Beef to lock in the flavours, add to the slow cooker.
- Mix the Espresso Coffee, BBQ Sauce, Balsamic Vinegar, Worcestershire sauce, Brown Sugar, and Honey – pour over the Beef.
- Open the lid halfway through cooking and baste the Beef in the sauce.
- Slow cook for 6-8 hours on high until you can easily slice through it.
To Serve
- Tastes great on fresh Brioche warmed Burger buns with Coleslaw, Ranch and Pickles.
- To do this, just slice Brioche buns in half and Butter each side, cook Butter side down on medium heat until soft, browned and warm.
- Mix pre-packaged Coleslaw, and my Ranch Sauce recipe below, you can also buy this from the supermarket if you are stuck for time.
For the Ranch sauce, mix all the above ingredients together.
Add Salt and Pepper to taste.
To serve – assemble the Burgers with the Beef, Coleslaw and Ranch Sauce and drizzle with any remaining sauce from the slow cooker.
